Ingredients

Scale
  • 2 boneless, skinless chicken breasts or thighs
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ cup BBQ sauce (your favorite kind)
  • 1 cup shredded cheddar cheese
  • 8 slider buns
  • Pickles (optional)
  • Fresh cilantro (optional)

Instructions

  1. Season and Cook the Chicken: Season chicken with salt, pepper, garlic powder, and onion powder. Heat olive oil in a skillet over medium-high heat. Cook chicken for 5-6 minutes per side until fully cooked through (165°F internal temperature).
  2. Shred the Chicken: Remove chicken from skillet and let rest for a few minutes. Shred with two forks into bite-sized pieces.
  3. Add BBQ Sauce: Return shredded chicken to skillet, pour in BBQ sauce, and simmer for 3-5 minutes.
  4. Assemble the Sliders: Slice slider buns in half and place the bottoms on a baking sheet. Spoon BBQ chicken mixture onto buns and top with shredded cheddar cheese.
  5. Bake: Place sliders in the oven at 350°F for 5-7 minutes until cheese is melted and buns are lightly toasted.
  6. Add Toppings: Remove sliders from the oven and add optional pickles and fresh cilantro.

Notes

  • Use chicken thighs for extra juiciness and flavor.
  • For extra spice, add jalapeños or hot sauce to the BBQ chicken.
  • Make ahead by prepping the BBQ chicken in advance and refrigerating it for up to 2 days.
