  • 2 sheets puff pastry (store-bought or homemade)
  • 8 large eggs
  • 68 slices streaky bacon
  • 1/4 cup milk or cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon ground nutmeg
  • 1 egg (for egg wash, optional)

Instructions

  1. Preheat Oven & Prep Pastry: Preheat oven to 375°F (190°C). Line a pie dish with one sheet of puff pastry, pressing it gently into the corners. Trim excess if needed.
  2. Layer the Bacon: Arrange bacon slices evenly over the pastry base, covering it completely.
  3. Add the Eggs: Carefully crack whole eggs over the bacon, spacing them evenly. Avoid breaking the yolks for a traditional look.
  4. Season & Add Cream: Sprinkle with salt, pepper, and nutmeg. Drizzle milk or cream over the top for extra richness.
  5. Top with Pastry & Seal: Place the second sheet of puff pastry over the top, pressing the edges to seal. Crimp with a fork and cut a few small slits in the top to allow steam to escape.
  6. Apply Egg Wash (Optional): Lightly beat an egg and brush it over the pastry for a golden finish.
  7. Bake: Bake for 35-40 minutes, or until the pastry is golden brown and crispy.
  8. Cool & Serve: Let the pie rest for 10 minutes before slicing. Serve warm or at room temperature.
