These quick and flavorful gochujang noodles are made with chewy noodles tossed in a bold Korean chili paste sauce that’s just the right amount of spicy, sweet, and umami. It’s the perfect weeknight dinner when you want something exciting but low-effort.

  • 2 tablespoons gochujang (Korean chili paste)

  • 1 teaspoon sesame oil
  • 1 teaspoon rice vinegar
  • 1 teaspoon sugar (adjust to taste)
  • 2 cloves garlic, minced
  • 1 tablespoon neutral oil (for sautéing)
  • Optional toppings: chopped scallions, sesame seeds, fried egg

Instructions

  1. Cook the Noodles: Boil the noodles according to package instructions until al dente. Drain and set aside.
  2. Prepare the Sauce: In a bowl, whisk together gochujang, soy sauce, sesame oil, rice vinegar, sugar, and minced garlic until smooth. Adjust the spice and sweetness to your preference.
  3. Combine Noodles and Sauce: In a skillet over medium heat, add the neutral oil. Add the cooked noodles and pour in the sauce. Toss continuously for 2-3 minutes until the noodles are evenly coated and heated through.
