Ingredients

Units Scale
  • 1 (16 oz) can refried beans
  • 1 packet taco seasoning
  • 2 cups guacamole
  • 1 cup sour cream (or Greek yogurt)
  • 1 cup salsa or pico de gallo (drained if watery)
  • 1 1/2 cups shredded cheddar or Mexican blend cheese
  • 1 cup diced tomatoes
  • 1/2 cup sliced black olives
  • 1/2 cup chopped green onions

Instructions

  1. Prep the Base: In a mixing bowl, combine refried beans with taco seasoning. Spread the seasoned beans evenly in a 9×13 dish.
  2. Layer the Guacamole: Gently spread the guacamole over the refried beans, ensuring an even layer.
  3. Add the Creamy Layer: Mix sour cream with a little taco seasoning (optional) and spread it over the guacamole.
  4. Salsa Time: Evenly distribute the salsa or pico de gallo on top. If using salsa, ensure it is well-drained to prevent a watery dip.
  5. Cheese Layer: Sprinkle shredded cheese over the top.
  6. Final Toppings: Add diced tomatoes, sliced black olives, and chopped green onions for extra flavor and texture.
  7. Chill & Serve: Cover and refrigerate for at least 30 minutes before serving. Serve cold with tortilla chips.

Notes

  • Drain salsa and tomatoes well to prevent a soggy dip.
  • To make ahead, assemble a few hours before serving and refrigerate.
  • Press plastic wrap directly onto the guacamole layer to prevent browning.
