This Creamy Italian Sausage Gnocchi Soup is a rich, hearty, and ultra-comforting dish packed with fluffy potato gnocchi, savory Italian sausage, and a velvety broth. Perfect for chilly nights or when you need a warm, satisfying meal in one bowl!

Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 16 oz potato gnocchi
  • 2 cups fresh spinach or kale
  • ½ cup grated Parmesan cheese
  • Salt & pepper to taste

Instructions

  1. Sauté the Sausage – In a large pot, cook the Italian sausage over medium heat until browned, breaking it up as it cooks. Drain excess grease if necessary.
  2. Sauté the Aromatics – Add the diced onion and minced garlic, cooking until soft and fragrant (about 2-3 minutes).
  3. Simmer the Broth – Pour in the chicken broth and bring to a gentle simmer. Let cook for about 10 minutes.
  4. Add the Gnocchi – Stir in the gnocchi and let them cook until they float to the top (about 3-4 minutes).
  5. Stir in Cream & Greens – Lower heat and add the heavy cream and spinach (or kale). Simmer until greens are wilted (2-3 minutes).
  6. Finish with Parmesan – Stir in grated Parmesan cheese. Taste and adjust seasoning with salt and pepper. Serve warm!

Notes

  • For a spicier version, use hot Italian sausage.
  • To lighten it up, use half-and-half instead of heavy cream.
  • Don’t overcook the gnocchi—add them towards the end for the best texture.
