These buttery, flaky Sausage, Egg Breakfast Roll-Ups are the perfect grab-and-go breakfast option. Packed with cheesy scrambled eggs and savory sausage, they’re easy to make, great for meal prep, and absolutely delicious!

  • 1/2 pound breakfast sausage
  • 4 large eggs
  • 1 cup shredded cheese (cheddar, mozzarella, or preferred type)
  • 1 (8-ounce) can crescent roll dough
  • 2 tablespoons butter (melted)

Instructions

 

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Cook the Sausage: In a skillet over medium heat, cook the breakfast sausage, breaking it into crumbles. Once browned, drain excess grease and set aside.
  3. Scramble the Eggs: In the same pan, scramble the eggs until just set. Remove from heat.
  4. Assemble the Roll-Ups: Separate the crescent dough into triangles. Place a spoonful of scrambled eggs and sausage on the wide end of each triangle. Sprinkle with cheese and roll them up tightly.
  5. Bake: Arrange the roll-ups on the prepared baking sheet. Brush with melted butter and bake for 12-15 minutes or until golden brown.
  6. Serve: Let cool slightly and enjoy warm!
