  • 1 teaspoon cinnamon
  • 1/2 cup brown sugar
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 1 teaspoon vanilla extract
  • For the Cinnamon Glaze:
  • 1 cup powdered sugar
  • 12 tablespoons milk (adjust for consistency)
  • 1/2 teaspoon cinnamon

Instructions

  1. Make the Muffin Batter:
    In a large bowl, mix the dry ingredients: flour, baking powder, salt, and cinnamon. In another bowl, whisk together the wet ingredients: eggs, milk, melted butter, and vanilla extract. Gradually add the wet mixture to the dry ingredients and stir until just combined.
  2. Prepare the Apples:
    Peel and chop apples into small, bite-sized pieces. Toss them with cinnamon and brown sugar. Gently fold the apple mixture into the muffin batter.
  3. Fill the Muffin Tin:
    Scoop the batter into a greased or lined muffin tin, filling each cup about 3/4 of the way full.
  4. Bake the Muffins:
    Bake at 350°F for 18–22 minutes, or until the muffins are golden brown and a toothpick comes out clean.
  5. Make the Cinnamon Glaze:
    Whisk together powdered sugar, milk, and cinnamon. Once the muffins have cooled slightly, drizzle the glaze over the tops.

  • For extra apple flavor, add apple pie spice to the batter.
  • Make sure the apples are chopped into small pieces to ensure even baking.
  • You can swap half of the all-purpose flour with whole wheat flour for a slightly healthier version.
