Texas Cowboy Stew is a hearty and flavorful dish packed with smoked sausage, ground beef, potatoes, beans, and vegetables in a rich and spicy broth.

Meat and Vegetables:

  • 12 ounces beef smoked sausage, sliced
  • 1 pound lean ground beef
  • 1½ cups diced yellow onion
  • 1 tablespoon minced garlic
  • 3 cups diced russet potato
  • 1½ cups frozen sweet yellow corn
  • 1½ cups frozen peas & carrots medley blend

Broth and Canned Goods:

  • 2 cups beef broth
  • 31 ounces pinto beans with liquids
  • 14.5 ounces stewed tomatoes
  • 10 ounces original Rotel diced tomatoes & green chilies

Seasonings:

  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Brown the Meats: In a large pot, cook the sausage and ground beef until browned. Drain excess fat.
  2. Add Ingredients: Add onion, garlic, potatoes, corn, peas & carrots, beef broth, pinto beans, stewed tomatoes, Rotel, and seasonings to the pot.
  3. Simmer: Bring to a boil, then reduce heat and simmer for about 30 minutes until potatoes are tender.
  4. Adjust Seasoning: Taste and adjust salt and pepper if needed.
  5. Serve: Ladle the stew into bowls and enjoy hot.

Notes

  • This stew can be served with cornbread or a side of rice for a complete meal.
  • You can customize the spice level by adjusting the amount of chili powder and green chilies.
