  • 1 small head of cauliflower, chopped into florets or riced (about 4 cups)
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • ½ tsp smoked paprika
  • ½ tsp oregano
  • ½ tsp salt (or to taste)
  • ¼ tsp black pepper
  • ¼ cup fresh cilantro, chopped (for garnish)
  • ½ avocado, sliced (optional)
  • Sour cream (optional, for serving)

Instructions

  1. Brown the Beef – In a large skillet over medium heat, cook the ground beef until browned, breaking it up as it cooks. Drain excess grease if necessary.
  2. Sauté the Veggies – Add olive oil, then stir in the onion, bell pepper, and garlic. Cook for 3-4 minutes until softened.
  3. Season and Add Cauliflower – Stir in chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Add the cauliflower and cook for another 5 minutes.
  4. Stir in Tomatoes and Simmer – Pour in the diced tomatoes with green chilies. Stir well and let simmer for 5-7 minutes until the cauliflower is tender.
  5. Melt the Cheese – Sprinkle shredded cheese on top, cover, and cook for 2-3 minutes until melted.
  6. Serve – Garnish with fresh cilantro, avocado slices, and a dollop of sour cream if desired. Serve hot
