A homemade version of Subway’s popular Italian Herb and Cheese Bread, featuring a soft, fluffy texture infused with Italian herbs and topped with a blend of cheeses.

Ingredients

For the Dough:

  • 3 cups warm water
  • 4 tablespoons dry active yeast
  • 1/4 cup granulated sugar
  • 1/3 cup vegetable oil
  • 1 tablespoon salt
  • 2 large eggs
  • 1/3 cup instant mashed potato flakes (optional)
  • 7 1/2 cups bread flour

For the Italian Herb Seasoning:

  • 1 tablespoon dried oregano
  • 2 tablespoons garlic powder
  • 1 tablespoon dried parsley
  • 2 tablespoons grated Parmesan cheese

For the Topping:

  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded sharp cheddar cheese

Instructions

  1. Prepare the Dough:

    • In the bowl of a stand mixer, whisk together the warm water and dry active yeast.
    • Add the granulated sugar, vegetable oil, salt, eggs, and instant mashed potato flakes (if using). Mix until well combined.
    • Gradually add the bread flour, mixing until a dough forms. Knead the dough on low speed for about 6 minutes until smooth and elastic.
    • Cover the dough and let it rest for 10 minutes.
  2. Shape the Bread:

    • Transfer the dough onto a floured surface and divide it into 8 equal pieces.
    • Roll each piece into a 12-inch log.
    • Place the logs onto silicone sub roll mats or a baking sheet lined with parchment paper.
    • Spray the tops of the dough logs with water.
    • Dredge the tops into the Italian herb seasoning mixture.
    • Allow the dough to rise until tripled in size, approximately 1 hour.
  3. Add Cheese and Bake:

    • Preheat the oven to 375°F (190°C).
    • Sprinkle the shredded Monterey Jack and sharp cheddar cheeses evenly over the tops of the dough logs.
    • Bake for 15-18 minutes, or until the bread is golden brown.
    • Remove from the oven and let cool before slicing.

Notes

  • This recipe yields 8 footlong-sized bread loaves.
  • For best results, use bread flour to achieve the desired texture.
  • Instant mashed potato flakes are optional but can contribute to a softer bread.
