  • 2 tbsp lime juice
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup crumbled Cotija or feta cheese
  • 2 tbsp chopped fresh cilantro
  • 1 tbsp olive oil

Instructions

Step 1: Cook the Chicken

  1. Season chicken with chili powder, garlic powder, salt, and black pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Cook the chicken for 5-6 minutes per side, or until fully cooked (165°F internal temperature).
  4. Remove from heat and let rest before slicing.

Step 2: Char the Corn

  1. If using fresh corn, grill or pan-sear it until slightly charred, turning occasionally.
  2. If using canned or frozen corn, sauté in a dry pan over high heat until lightly browned.
  3. Set aside.

  1. Divide cooked rice between serving bowls.
