BEEF MARINADE

  • 1 tbsp Shaoxing wine
  • 1 tbsp light soy sauce
  • 1 tbsp cornflour
  • 1 tbsp white sugar
  • 1 tbsp water
  • ½ tsp cracked black pepper
  • ¼ tsp bicarbonate of soda
  • 1 tbsp cooking oil

STIR-FRY

  • 400 g dried flat rice noodles
  • 2 tbsp cooking oil
  • 1 small brown onion
  • 6 spring onions
  • 2 tbsp dark soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp light soy sauce
  • 250 g bean sprouts
  • 1 tbsp sesame oil

Instructions

  1. Marinate the beef: Combine all marinade ingredients in a bowl and let the beef marinate for at least 30 minutes.
  2. Cook the noodles: Cook the flat rice noodles according to package instructions, then drain and set aside.
  3. Stir-fry: Heat oil in a wok, add onions and spring onions, then add marinated beef and stir-fry until cooked. Add noodles, sauces, and bean sprouts, stir well.
  4. Finish: Drizzle with sesame oil and toss to combine before serving hot.
