It’s creamy, comforting, and full of flavor with sharp cheddar cheese, fresh spinach, and a velvety smooth texture. Perfect for a chilly night or when you need a quick, satisfying meal.

Ingredients

Scale
  • 2 tbsp butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 3 cups chicken or vegetable broth
  • 2 cups fresh spinach, chopped
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese, shredded
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp ground nutmeg

Instructions

  1. Sauté the Aromatics – In a large pot, melt butter over medium heat. Add the onion and garlic, cooking until softened and fragrant.
  2. Make the Roux – Stir in flour and cook for a minute, stirring constantly. This helps thicken the soup and gives it a rich texture.
  3. Add the Liquid – Slowly pour in the broth, whisking to prevent lumps. Bring to a simmer and let it cook until slightly thickened.
  4. Stir in the Spinach – Add the chopped spinach and cook until wilted, about 3-4 minutes.
  5. Blend Until Smooth (Optional) – For a smooth soup, use an immersion blender to blend everything until silky. If you like a bit of texture, leave it chunky.
  6. Add the Cheese and Cream – Lower the heat and stir in the cheddar cheese and heavy cream. Stir until the cheese is fully melted and smooth.
  7. Season and Serve – Taste and adjust with salt, pepper, and a pinch of nutmeg for extra warmth. Serve hot.

Notes

  • Use sharp cheddar for the best bold, cheesy flavor.
  • Don’t boil after adding cheese to prevent separation.
  • Blend for a smooth texture or leave it chunky for a heartier soup.
