This Spinach and Feta Grilled Cheese recipe combines the rich flavors of feta and mozzarella with the earthy taste of spinach, sandwiched between two slices of crispy bread.

  • 1/2 Tbsp olive oil
  • 1 clove garlic, minced
  • 1/4 lb. frozen chopped spinach
  • 1 pinch salt and pepper
  • 4 slices bread
  • 2 Tbsp butter
  • 1 cup shredded mozzarella
  • 1 oz. feta
  • 1 pinch crushed red pepper

Instructions

  1. Prepare the spinach: In a skillet, heat olive oil and sauté garlic. Add frozen spinach, salt, and pepper. Cook until heated through.
  2. Assemble the sandwich: Butter one side of each bread slice. Place mozzarella, feta, and spinach mixture between two slices, buttered side out.
  3. Grill the sandwich: Cook in a skillet until the bread is crispy and the cheese is melted.

Notes

  • You can add sliced tomatoes or roasted red peppers for extra flavor.
  • For a healthier option, use whole grain bread and reduce the amount of butter.
