1/2 Tbsp olive oil
1 clove garlic, minced
1/4 lb. frozen chopped spinach
1 pinch salt and pepper
4 slices bread
2 Tbsp butter
1 cup shredded mozzarella
1 oz. feta
1 pinch crushed red pepper
Instructions
Prepare the spinach: In a skillet, heat olive oil and sauté garlic. Add frozen spinach, salt, and pepper. Cook until heated through.
Assemble the sandwich: Butter one side of each bread slice. Place mozzarella, feta, and spinach mixture between two slices, buttered side out.
Grill the sandwich: Cook in a skillet until the bread is crispy and the cheese is melted.
Notes
You can add sliced tomatoes or roasted red peppers for extra flavor.
For a healthier option, use whole grain bread and reduce the amount of butter.
