1/4 cup grated cotija cheese (or Parmesan cheese as a substitute)

Instructions
Prepare the batter: In a large bowl, mix together corn, flour, cornmeal, baking powder, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper.
Add wet ingredients: In a separate bowl, whisk eggs, milk, cilantro, and cotija cheese. Fold this mixture into the corn mixture.
Fry the corn bites: Heat oil in a skillet, drop spoonfuls of the batter into the oil, and fry until golden brown on both sides.
Serve: Drain on paper towels, sprinkle with lime juice, chili powder, and cotija cheese. Serve hot and enjoy!
Notes
You can adjust the spice level by increasing or decreasing the amount of chili powder used.
For a healthier version, you can bake these corn bites instead of frying them.
