Ingredients

Units Scale
  • 1 pound ground beef
  • 1 small yellow onion, diced
  • 2 teaspoons jarred minced garlic
  • 1 green bell pepper, seeded and diced
  • 2 cups tomato basil pasta sauce
  • 8 ounces tomato sauce
  • 15 ounces diced tomatoes
  • 1 cup water
  • 1 teaspoon herb and garlic seasoning
  • 6 ounces elbow macaroni

Instructions

  1. Brown the Ground Beef: In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat. Add the chopped onion and garlic, cooking until the onion is softened and fragrant.
  2. Combine Ingredients: Transfer the beef mixture to your slow cooker. Add the diced tomatoes (with juice), tomato sauce, pasta sauce, water, and herb and garlic seasoning. Stir to combine.
  3. Cook: Cover and cook on low for 4-5 hours. About 30 minutes before serving, stir in the elbow macaroni. Continue cooking until the pasta is tender.
  4. Serve: Once the pasta is cooked, serve the goulash hot, optionally garnished with shredded cheese or a dollop of sour cream.

Notes

  • Don’t Overcook the Pasta: Be sure to add the pasta toward the end of the cooking time to prevent it from becoming mushy. Stir it in about 30 minutes before serving.
  • Customize the Spice Level: If you like your goulash with a bit of heat, feel free to add crushed red pepper flakes, a diced jalapeño, or even a dash of cayenne pepper.
  • Creamy Version: For a creamier texture, try stirring in some cream cheese or shredded cheddar cheese during the last 10 minutes of cooking. This will add richness to the dish.
  • Meal Prep Friendly: This goulash holds up well in the fridge for up to 3 days, and the flavors only improve over time. It also freezes nicely, so it’s a great make-ahead meal.
