Slow Cooker French Dip Sandwiches are a perfect balance of savory, melty, and comforting flavors. Juicy, tender beef is slow-cooked in a rich broth, piled onto toasted hoagie rolls, topped with melty cheese, and served with a warm, flavorful au jus for dipping. This easy set-it-and-forget-it meal is ideal for busy weeknights, game nights, or when you need some serious comfort food.

Ingredients

  • 34 lbs boneless beef chuck roast
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 3 cups beef broth (low-sodium recommended)
  • 2 tbsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1 tbsp olive oil (for searing)
  • 6 hoagie rolls or French bread, toasted
  • 6 slices provolone or Swiss cheese

Instructions

1. Season and Sear the Beef

  • Season the beef chuck roast with salt, pepper, and garlic powder.
  • Heat olive oil in a large skillet over medium-high heat.
  • Sear the beef for about 3-4 minutes per side until browned.

2. Prepare the Slow Cooker

  • Place the sliced onions and minced garlic in the bottom of the slow cooker.
  • Lay the seared beef on top and pour in the beef broth, Worcestershire sauce, soy sauce, thyme, and rosemary.

3. Slow Cook the Beef

  • Cover and cook on LOW for 7-8 hours or HIGH for 4-5 hours, until the beef is fork-tender.
  • Remove the beef from the slow cooker and shred it with two forks.

4. Assemble the Sandwiches

  • Preheat the broiler.
  • Toast the hoagie rolls under the broiler for 1-2 minutes.
  • Pile shredded beef onto each roll and top with a slice of cheese.
  • Place under the broiler for another minute until the cheese melts.

5. Serve with Au Jus

  • Strain the cooking liquid to remove solids and serve it as a warm dipping sauce (au jus).
  • Dip your sandwich, enjoy, and savor the rich flavors!

Notes

  • Searing the beef enhances the flavor, so don’t skip this step!
  • Use low-sodium beef broth to avoid overly salty au jus.
  • If you want a thicker dipping sauce, mix 1 tsp cornstarch with 1 tbsp water and stir into the au jus before serving.
