  • 4 medium Yukon Gold or Russet potatoes, thinly sliced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  1. Brown the Beef: In a skillet, cook the ground beef over medium heat until browned. Drain excess fat and set aside.
  2. Layer the Ingredients: In the bottom of a slow cooker, layer sliced potatoes, followed by the cooked ground beef, drained beans, and diced tomatoes with green chilies.
  3. Season and Mix: Sprinkle garlic powder, onion powder, paprika, salt, and pepper over the layers. Stir gently to combine.
  4. Slow Cook: Cover and cook on low for 6-7 hours or high for 3-4 hours, until the potatoes are tender.
  5. Add Cheese: In the last 15-20 minutes, sprinkle shredded cheddar cheese on top and cover until melted.
  6. Serve: Scoop onto plates and enjoy a warm, comforting meal!
