Main Ingredients:

  • 1 tablespoon extra-virgin olive oil plus 2 teaspoons, divided
  • 2 pounds boneless skinless chicken breasts or thighs
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 1 medium yellow onion chopped
  • 3 cloves garlic minced
  • 1 tablespoon balsamic vinegar plus 1/2 teaspoon, divided
  • 1 can crushed tomatoes 28 ounces
  • 1 medium green bell pepper chopped
  • 8 ounces sliced baby bella cremini mushrooms
  • 2 teaspoons Italian seasoning

For Serving:

  • Whole wheat pasta, brown rice, polenta, rice, zucchini noodles, or baked and shredded spaghetti squash
  • Chopped fresh parsley, freshly grated Parmesan cheese

Instructions

  1. Season the chicken: Season the chicken with salt and pepper.
  2. Sear the chicken: Heat 1 tablespoon of olive oil in a skillet and sear the chicken until browned on both sides.
  3. Prepare the slow cooker: Place the onions, garlic, balsamic vinegar, crushed tomatoes, bell pepper, mushrooms, and Italian seasoning in the slow cooker.
  4. Add the chicken: Place the seared chicken on top of the vegetable mixture in the slow cooker.
  5. Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Serve: Serve the chicken cacciatore over your choice of accompaniment and garnish with parsley and Parmesan cheese.

Notes

  • You can use either chicken breasts or thighs for this recipe based on your preference.
