Ingredients

Units Scale

  • 1.5 lbs beef chuck roast, thinly sliced
  • 4 cups beef broth
  • 1/4 cup soy sauce (low-sodium recommended)
  • 2 tbsp hoisin sauce
  • 1 tbsp sesame oil
  • 3 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 cup carrots, julienned
  • 1 cup mushrooms, sliced
  • 3 green onions, chopped (divided)
  • 2 packs instant ramen noodles (seasoning packet discarded)
  • 2 soft-boiled eggs (for topping, optional)
  • 1 tbsp sesame seeds (for garnish)

Instructions

  1. Prep the Beef and Broth: Add sliced beef, beef broth, soy sauce, hoisin sauce, sesame oil, garlic, and ginger to the slow cooker. Stir to combine.
  2. Slow Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours until the beef is tender.
  3. Add the Veggies: Stir in carrots, mushrooms, and half the green onions. Cook for an additional 30 minutes on low.
  4. Cook the Noodles: In the last 10 minutes, add the ramen noodles and let them soften.
  5. Serve: Ladle into bowls, top with remaining green onions, soft-boiled eggs, and sesame seeds.

Notes

  • For extra depth of flavor, sear the beef before adding it to the slow cooker.
  • To make it spicier, add sriracha, red pepper flakes, or chili oil.
  • Avoid overcooking the noodles—add them just before serving.
