½ teaspoon sweet paprika
2 large eggs (beaten)
1 cup breadcrumbs
vegetable oil (for frying)

Boil the eggs: Start by boiling the eggs until they are hard-boiled. Peel and set aside.
Prepare the sausage mixture: In a bowl, combine the breakfast sausage meat with flour, salt, pepper, and paprika. Mix well.
Assemble the Scotch Eggs: Flatten a portion of the sausage mixture in your hand, place a boiled egg in the center, and wrap the sausage around the egg, ensuring it is fully covered.
Coat and fry: Dip each sausage-coated egg in beaten eggs, then roll in breadcrumbs. Fry in hot oil until golden brown and cooked through.
Serve: Slice the Scotch Eggs and enjoy them hot or cold.
Notes
