Chicken:
2 large boneless, skinless chicken breasts, cut in half horizontally
1 tsp sweet paprika
1 tsp sea salt flakes
1 tsp cracked black pepper
1 tbsp olive oil
Sauce:
200 g streaky bacon, cut into strips
1 tbsp unsalted butter
1 small onion, finely diced
1 tbsp finely chopped garlic
200 g Swiss brown mushrooms, sliced
300 ml thickened cream
½ tsp chicken stock powder
1 cup freshly grated parmesan
1 tbsp finely chopped flat-leaf parsley
Instructions
Cook Chicken: Season chicken with paprika, salt, and pepper. Cook in olive oil until golden and cooked through. Set aside.
Make Sauce: Cook bacon until crispy. Add butter, onion, garlic, and mushrooms. Stir in cream, stock powder, and parmesan until thickened.
Combine: Cook pasta according to package instructions. Toss with sauce, sliced chicken, and parsley.
Serve: Sprinkle with extra parmesan before serving.
Notes
You can use any pasta shape you prefer for this recipe.
