These Roasted Stuffed Dates are a delightful combination of sweet and savory flavors. Medjool dates are stuffed with a creamy goat cheese mixture, topped with walnuts, rosemary, and a hint of orange zest, then roasted to perfection.

  • 1 (12-oz.) pkg. pitted Medjool dates
  • 1 (4-oz.) log goat cheese *soften to room temperature for easier handling
  • 1/3 cup very finely chopped walnuts
  • 2 tsp. minced fresh rosemary
  • 1 tsp. orange zest plus 2 tsp. fresh orange juice (from 1 navel orange)
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. sea salt
  • 3 Tbsp. extra-virgin olive oil
  • A drizzle of hot honey for garnish (optional)

Instructions

  1. Preheat oven: Preheat the oven to 375°F.
  2. Prepare dates: Cut a small slit in each date and remove the pit.
  3. Make filling: In a bowl, mix goat cheese, walnuts, rosemary, orange zest, orange juice, cinnamon, and salt until well combined.
  4. Stuff dates: Fill each date with the cheese mixture.
  5. Roast: Place stuffed dates on a baking sheet, drizzle with olive oil, and roast for about 10-12 minutes until the dates are slightly caramelized.
  6. Serve: Drizzle with hot honey before serving, if desired.
