Ingredients

Units Scale

  • 1/2 cup (1 stick) unsalted butter, softened to room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 3/4 cup Rice Krispies cereal
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the Butter and Sugars: In a large bowl, beat together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
  3. Add the Egg and Vanilla: Mix in the egg until well combined, then stir in the vanilla extract.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  5. Fold in Rice Krispies and Chocolate Chips: Gently fold in the Rice Krispies cereal and semi-sweet chocolate chips, being careful not to overmix to maintain the cereal’s crunch.
  6. Scoop and Bake: Drop rounded tablespoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are golden brown.
  7. Cool and Enjoy: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • Ensure butter is at room temperature for optimal mixing.
  • Avoid overmixing the dough to prevent tough cookies.
  • For added flavor, consider mixing in a handful of chopped nuts like pecans or walnuts.
  • To make larger cookies, use a bigger cookie scoop and extend the baking time by a couple of minutes.
