These Rice Krispie Chocolate Chip Cookies are a fun twist on the classic chocolate chip cookie, combining chewy and crunchy textures with a chocolatey flavor. The Rice Krispies add a delightful crunch, making each bite even more enjoyable.

Ingredients

Scale
  • 1 cup butter, softened
  • 1 cup brown sugar, packed
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 ¼ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 cups Rice Krispies
  • 1 ½ cups chocolate chips

Instructions

  1. Cream the Butter and Sugar: In a large bowl, cream together the softened butter and brown sugar until light and fluffy, about 2-3 minutes.
  2. Add the Wet Ingredients: Beat in the eggs and vanilla extract until well combined.
  3. Mix in the Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Stir in the Rice Krispies and Chocolate Chips: Gently fold in the Rice Krispies and chocolate chips until evenly distributed.
  5. Scoop and Bake: Scoop tablespoon-sized portions of dough onto a parchment-lined baking sheet. Bake at 350°F for 10-12 minutes, or until the edges are golden and the centers are set.
  6. Cool and Enjoy: Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • Don’t Overmix: Mix the dough only until combined to avoid tough cookies.
  • Cookie Scoop: Using a cookie scoop ensures even-sized cookies.
  • Extra Crunch: Feel free to add more Rice Krispies for extra crunch.
