  • 68 fresh raspberries
  • 1 oz passionfruit pulp or unsweetened passionfruit juice
  • 2 oz tequila (silver or reposado)
  • 3/4 oz fresh lemon juice
  • 1/2 oz simple syrup (adjust to taste)
  • 1 egg white (or 1 oz aquafaba for vegan option)
  • Ice
  • Fresh raspberries or passionfruit slice for garnish

Instructions

 

  1. Muddle the Raspberries – In a cocktail shaker, muddle fresh raspberries with passionfruit pulp and simple syrup to extract the flavors.
  2. Add the Liquids – Pour in tequila, lemon juice, and egg white (or aquafaba).
  3. Dry Shake – Shake the mixture without ice for about 15 seconds to help the egg white foam up properly.
  4. Add Ice & Shake Again – Add ice and shake vigorously for another 20 seconds until chilled.
  5. Strain & Serve – Strain into a chilled coupe or rocks glass. For a smoother drink, double strain through a fine mesh sieve.
  6. Garnish & Enjoy – Top with fresh raspberries or a passionfruit slice for an elegant finish.
