Instructions
Prepare the Pork: Season the pork tenderloin with salt, pepper, and optional garlic powder. Lay out prosciutto slices slightly overlapping on a cutting board. Roll the pork in the prosciutto, ensuring it’s fully covered.
Sear the Pork: Heat olive oil in an oven-safe skillet over medium-high heat. Sear the prosciutto-wrapped pork for 2-3 minutes on each side until golden brown.
Roast the Pork: Transfer the skillet to a preheated 400°F oven and roast for 20-25 minutes until the internal temperature reaches 145°F.
Crisp the Sage: In a separate pan, heat olive oil and fry the sage leaves for 1-2 minutes until crispy. Remove from oil and drain on a paper towel.
Serve and Enjoy: Let the pork rest for a few minutes before slicing. Serve with crispy sage on top.
