These potato onion pierogis are a delicious traditional dish filled with creamy mashed potatoes and sautéed onions, wrapped in a tender dough. Perfect for a comforting meal or appetizer.

Dough:

    • 2 cups all-purpose flour
    • 1/2 tsp salt
    • 1 large egg
    • 1/2 cup sour cream
    • 1/4 cup butter, softened

Filling:

  • 2 cups mashed potatoes
  • 1 cup onion, finely chopped
  • 2 tbsp butter (for filling)
  • Salt and pepper, to taste
  • Extra butter or oil, for frying
  • Sour cream, for serving (optional)

Instructions

  1. Prepare the dough: Mix flour and salt in a bowl. Add egg, sour cream, and butter. Knead until smooth. Let it rest.
  2. Make the filling: Sauté onions in butter until soft. Mix with mashed potatoes, salt, and pepper.
  3. Assemble: Roll out dough, cut circles, add filling, seal edges. Boil pierogis until they float.
  4. Serve: Fry in butter until golden. Serve with sour cream.
