Coconut Lime Sauce:

  • 1 cup coconut milk
  • 1/2 cup fish stock or water
  • 1 tablespoon olive oil or butter

  • 1 small onion, finely chopped
  • 1 tablespoon fresh ginger, grated
  • Zest of 1 lime
  • Juice of 2 limes
  • 1 tablespoon soy sauce
  • 1 teaspoon honey or maple syrup (optional)
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish (optional)
  • Lime wedges, for serving

Instructions

  1. Prepare the Sauce: In a saucepan, heat olive oil or butter over medium heat. Add garlic, onion, and ginger, sauté until fragrant.
  2. Add Flavor: Stir in coconut milk, fish stock, lime zest, lime juice, soy sauce, honey, salt, and pepper. Simmer for a few minutes.
  3. Poach the Salmon: Place salmon fillets in the sauce, cover, and simmer gently until cooked through.
