  • 113 g unsalted butter (½ c.)
  • 100 g light brown sugar (½ c.)
  • 50 g granulated sugar (¼ c.)
  • 1 egg room temperature
  • ½ tsp. vanilla
  • 160 g all purpose flour (1 ⅓ c.)
  • ½ tsp. baking powder
  • ½ tsp. baking soda
  • ½ tsp. salt
  • 100 g chocolate (½ c. + 1 tbsp.)
  • 45 g pistachios crushed ( c.)

Instructions

  1. Preheat oven and prepare baking sheet: Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. Cream butter and sugars: In a mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add wet ingredients: Mix in the egg, vanilla, and pistachio cream until well combined.
  4. Add dry ingredients: Sift in the flour, baking powder, baking soda, and salt. Mix until just combined.
  5. Stir in mix-ins: Fold in the chocolate chips and crushed pistachios.
  6. Scoop and bake: Using a cookie scoop, portion out the dough onto the prepared baking sheet. Bake for 10-12 minutes or until the edges are golden brown.
  7. Cool and enjoy: Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Drizzle with extra pistachio cream before serving, if desired.
