Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups grated carrots
  • 3/4 cup chopped pistachios (plus extra for topping)

For the Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Prep the Oven and Pans: Preheat your oven to 350°F. Grease and line two 8-inch cake pans with parchment paper.
  2. Mix the Dry Ingredients: In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
  3. Prepare the Wet Ingredients: In another bowl, beat together eggs, granulated sugar, brown sugar, oil, and vanilla extract until well combined. Stir in the grated carrots and chopped pistachios.
  4. Combine and Bake: Gradually fold the dry ingredients into the wet ingredients, mixing until just combined. Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  5. Cool and Frost: Let the cakes cool completely before layering with cream cheese frosting. Sprinkle extra chopped pistachios on top for garnish.

Notes

  • Use freshly grated carrots for the best moisture and texture.
  • Toasting the pistachios enhances their flavor.
  • Let the cake chill in the fridge before serving for the best flavor.
