Instructions

  1. Preheat and Prep:
    • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it well.

  2. Mix the Dry Ingredients:

    • In a large bowl, whisk together the flour, baking powder, and a pinch of salt.

  3. Cream the Butter and Sugar:

    • In another bowl, beat the butter and sugar together until light and fluffy.

  4. Add the Wet Ingredients:

    • Mix in the eggs, vanilla extract, orange zest, and freshly squeezed orange juice. Stir in the yogurt or sour cream for added moisture.

  5. Combine and Fill:

    • Gradually mix the dry ingredients into the wet ingredients until just combined. Be careful not to overmix.

    • Spoon the batter into the muffin tin, filling each cup about ¾ full.

  6. Bake and Cool:

    • Bake for about 18-20 minutes, or until a toothpick inserted into the center comes out clean.
