Ingredients

Units Scale
  • 1 tablespoon olive oil
  • 1 pound ground chicken
  • 2 teaspoons Italian seasoning
  • 3 cloves garlic, minced
  • 1 tablespoon chopped Calabrian peppers (optional)
  • 4 cups reduced-sodium chicken broth
  • 8 ounces farfalle (bowtie) pasta
  • 1 cup frozen peas
  • 2 ounces freshly grated Parmigiano Reggiano or Parmesan cheese
  • For the Ricotta Sauce:
    • 15 ounces low-fat ricotta cheese
    • 1/2 cup milk
    • Juice of 2 lemons
    • Zest of 1 lemon
    • Black pepper, to taste

Instructions

  1. Cook the Chicken: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the ground chicken and cook until browned, breaking it apart as it cooks.
  2. Add Seasonings: Stir in the Italian seasoning, minced garlic, and chopped Calabrian peppers (if using). Cook for an additional 1-2 minutes until the garlic is fragrant.
  3. Deglaze and Add Broth: Pour a few tablespoons of the chicken broth into the pot to deglaze, scraping up any browned bits from the bottom. Then, add the remaining chicken broth and bring the mixture to a boil.
  4. Cook Pasta: Add the farfalle pasta to the pot and cook according to package instructions until al dente, approximately 10 minutes.
  5. Prepare Ricotta Sauce: While the pasta cooks, blend together the ricotta cheese, milk, lemon juice, lemon zest, and black pepper until smooth.
  6. Combine and Serve: Once the pasta is cooked, reduce the heat to low. Stir in the frozen peas and the ricotta sauce until well combined and heated through. Finally, mix in the grated cheese. Serve warm, garnished with additional grated cheese and fresh herbs if desired.

Notes

  • Calabrian Peppers: These add a spicy kick to the soup. If unavailable, substitute with red pepper flakes or omit for a milder flavor.
  • Ricotta Sauce: Blending the ricotta ensures a smooth texture in the soup.
  • Pasta: Farfalle is used here, but any short pasta like penne or rotini can be substituted.
  • Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently over low heat, adding a splash of broth if needed.
