Muffin Cinnamon Rolls combine the comforting flavors of traditional cinnamon rolls with the convenience of muffins. These soft, fluffy treats feature a cinnamon-sugar swirl and are topped with a sweet glaze, making them perfect for breakfast or a delightful snack.

  • 1 large egg
  • 1 cup milk
  • 1 teaspoon vanilla extract

For the Cinnamon Filling:

  • 1 cup brown sugar, loosely packed
  • 3 teaspoons ground cinnamon
  • 1 1/2 cups coarsely chopped pecans or walnuts (optional)
  • 3 tablespoons unsalted butter, melted

For the Glaze:

  • 2 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Grease a standard 12-cup muffin tin.
  2. Prepare Dry Ingredients: In a large bowl, whisk together the flour, baking powder, salt, and granulated sugar.
  3. Prepare Wet Ingredients: In a separate bowl, mix the melted butter, egg, milk, and vanilla extract until well combined.
  4. Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Prepare Cinnamon Filling: In a small bowl, mix together the brown sugar, cinnamon, and chopped nuts (if using).
  6. Assemble Muffins: Spoon half of the muffin batter into the prepared muffin tin. Sprinkle half of the cinnamon filling over the batter. Add the remaining muffin batter on top and sprinkle with the remaining cinnamon filling.
  7. Bake: Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
  8. Prepare Glaze: While the muffins are baking, prepare the glaze by mixing together the softened cream cheese, powdered sugar, milk, and vanilla extract until smooth.
  9. Glaze Muffins: Once the muffins have cooled slightly, drizzle the glaze over the top.

  • For a nuttier flavor, add chopped pecans or walnuts to the cinnamon filling.
