Mississippi Mud Potatoes are a rich, cheesy, and savory potato dish that’s perfect for family gatherings, BBQs, or holiday dinners. Made with tender potatoes, crispy bacon, gooey cheese, and a creamy sauce, this dish is a guaranteed crowd-pleaser!

Ingredients

  • 4 large russet potatoes, diced
  • 6 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter, melted
  • 2 green onions, chopped (for garnish)

Instructions

1. Preheat the Oven
Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.

2. Prepare the Potatoes
Dice the potatoes into bite-sized cubes and place them in a large mixing bowl.

3. Mix the Sauce
In a separate bowl, combine the sour cream, mayonnaise, garlic powder, onion powder, paprika, salt, and black pepper. Stir well.

4. Assemble the Dish
Pour the creamy mixture over the potatoes and toss to coat evenly. Transfer the potatoes to the prepared baking dish. Drizzle the melted butter over the top.

5. Bake
Cover with foil and bake for 45 minutes, stirring once halfway through.

6. Add the Cheese and Bacon
Remove the foil and sprinkle the shredded cheddar, mozzarella, and crumbled bacon over the potatoes. Return to the oven and bake uncovered for another 15 minutes, until the cheese is melted and bubbly.

7. Garnish and Serve
Remove from the oven and sprinkle with chopped green onions. Serve hot and enjoy!
