  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese (plus extra for topping)
  • 3 cloves garlic, minced
  • 1 egg
  • 1/4 cup milk
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat Oven: Set your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. Mix the Ingredients: In a large bowl, combine ground chicken, breadcrumbs, Parmesan, mozzarella, minced garlic, egg, milk, parsley, Italian seasoning, salt, and pepper. Mix gently until just combined to avoid overmixing.
  3. Shape the Meatloaf: Form the mixture into a loaf shape and place it on the prepared baking sheet.
  4. Bake: Bake for 35-40 minutes, or until the internal temperature reaches 165°F (74°C) and the meatloaf is firm.
