1/2cup breadcrumbs
1/2cup grated Parmesan cheese
1/2cup shredded mozzarella cheese (plus extra for topping)
3 cloves garlic, minced
1 egg
1/4cup milk
1 tablespoon fresh parsley, chopped
1 teaspoon Italian seasoning
Salt and black pepper to taste

Instructions
Preheat Oven: Set your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
Mix the Ingredients: In a large bowl, combine ground chicken, breadcrumbs, Parmesan, mozzarella, minced garlic, egg, milk, parsley, Italian seasoning, salt, and pepper. Mix gently until just combined to avoid overmixing.
Shape the Meatloaf: Form the mixture into a loaf shape and place it on the prepared baking sheet.
Bake: Bake for 35-40 minutes, or until the internal temperature reaches 165°F (74°C) and the meatloaf is firm.
Add a Parmesan Topping: In the last five minutes of baking, sprinkle extra shredded mozzarella on top of the meatloaf and let it melt slightly.
