Ingredients

Units Scale
  • 1 lb ground beef
  • 1 (16 oz) can refried beans
  • 1 (8 oz) package cream cheese, softened
  • 1 cup sour cream
  • 1 packet taco seasoning
  • 1 (10 oz) can Rotel tomatoes with green chilies, drained
  • 2 cups shredded Mexican cheese blend, divided
  • 1/4 cup sliced jalapeños (optional)
  • 1/4 cup chopped green onions
  • Tortilla chips, for serving

Instructions

  1. Brown the Beef: In a skillet over medium heat, cook the ground beef until fully browned. Drain excess grease, then stir in taco seasoning and Rotel tomatoes. Simmer for a few minutes to blend the flavors.
  2. Mix the Creamy Base: In a large bowl, combine the cream cheese, sour cream, and refried beans. Stir until smooth. Mix in half of the shredded cheese.
  3. Assemble the Dip: Spread the creamy bean mixture into a baking dish. Evenly layer the seasoned beef over the top, then sprinkle with the remaining shredded cheese.
  4. Bake Until Bubbly: Preheat oven to 375°F and bake for about 20 minutes, or until the cheese is melted and bubbly.
  5. Garnish and Serve: Top with sliced green onions and jalapeños if desired. Serve warm with tortilla chips and enjoy!

Notes

  • Use hot Rotel for extra spice.
  • Assemble ahead of time, refrigerate, and bake when ready to serve.
  • For a vegetarian version, omit the meat and add black beans or mushrooms.
  • Keep warm in a slow cooker on the warm setting for easy serving.
