Masala Potatoes are a delightful Indian dish featuring tender potatoes infused with aromatic spices, offering a spicy and flavorful experience. This versatile dish can be enjoyed as a side with rice and dal, stuffed into dosas, or paired with flatbreads like poori or roti.

  • 2 tablespoons oil (such as avocado or any neutral oil)
  • 1 teaspoon black mustard seeds
  • 1/2 teaspoon fenugreek seeds
  • 1/2 teaspoon fennel seeds
  • 4 dried red chili peppers (preferably Byadgi or Kashmiri; substitute with 2 guajillo peppers if unavailable)
  • 2 cloves garlic
  • 10 medium potatoes (red or yellow), diced into 3/4-inch pieces
  • 1/2 teaspoon turmeric powder
  • Salt, to taste
  • Juice of 1/2 a lime

Instructions

  1. Prepare the Spice Paste:
    1. Soak the dried red chilies in hot water for about 15 minutes until softened. Drain and transfer them to a blender along with the garlic cloves. Add a few tablespoons of water and blend to a smooth paste. Set aside.
  2. Boil the Potatoes:
    1. Place the diced potatoes in a pot, cover with water, and add a pinch of salt. Bring to a boil and cook until the potatoes are just tender but still firm. Drain and set aside.
  3. Temper the Spices:
    1. In a large skillet or wok, heat the oil over medium heat. Add the mustard seeds and let them splutter. Then, add the fenugreek and fennel seeds, sautéing briefly until aromatic.
  4. Add the Spice Paste:
    1. Introduce the prepared chili-garlic paste to the skillet. Cook, stirring continuously, until the raw smell dissipates and the oil begins to separate from the paste.
  5. Combine Potatoes with Masala:
    1. Add the boiled potatoes to the skillet, followed by the turmeric powder and salt. Gently mix to ensure the potatoes are well-coated with the spice mixture. Cook for a few more minutes, allowing the flavors to meld.
  6. Finish with Lime Juice:
    1. Drizzle the lime juice over the potatoes, give a final gentle stir, and remove from heat.
  7. Serve:
    1. Garnish with fresh cilantro if desired, and serve hot as a side dish or with your preferred accompaniment.
