  • 1 teaspoon Italian seasoning

  • 2 cups fresh spinach
  • 2 tablespoons olive oil or butter
  • Salt and black pepper to taste

Instructions

  1. Sauté the Aromatics: Heat olive oil in a large pot over medium heat. Add diced onions and garlic, cooking until fragrant (about 2 minutes).
  2. Cook the Chicken: Add the chicken breasts or thighs to the pot and season with salt, pepper, and Italian seasoning. Sear for about 3-4 minutes per side until lightly golden.
  3. Simmer the Broth: Pour in the chicken broth and sun-dried tomatoes. Bring to a gentle simmer and let the chicken cook through, about 15-20 minutes.
  4. Shred the Chicken: Remove the chicken from the pot, shred it with two forks, and return it to the soup.
  5. Make it Creamy: Stir in the heavy cream and grated Parmesan cheese. Let it simmer for another 5 minutes until slightly thickened.
  6. Add Spinach and Serve: Stir in the fresh spinach and cook until wilted. Serve warm with extra Parmesan on top!
