  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 2 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. Cook the Macaroni: Cook the elbow macaroni according to the package instructions. Drain and set aside.
  2. Make the Roux: In a large pot, melt butter over medium heat. Whisk in the flour to create a roux. Cook for 1-2 minutes, stirring constantly, until the mixture thickens and turns slightly golden.
  3. Add the Broth and Milk: Slowly pour in the chicken broth while whisking to avoid lumps. Add the milk, continue whisking, and bring the mixture to a simmer. Let it cook for 5 minutes or until it thickens slightly.
  4. Stir in the Cheese: Reduce the heat to low and gradually stir in the shredded cheddar cheese. Stir until the cheese is fully melted and the soup is smooth.
  5. Add the Macaroni: Add the cooked macaroni to the pot and stir to combine. Simmer for a few more minutes to ensure everything is heated through.
  6. Season to Taste: Adjust the seasoning with salt, pepper, garlic powder, or onion powder to taste.
  7. Serve Warm: Ladle the soup into bowls and serve hot. Garnish with extra cheese or fresh herbs if desired.
