Ingredients

Units Scale

For the Fries:

  • 32 ounces frozen French fries (or homemade fries)

For the Cajun Seasoning:

  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon chili powder
  • 1/8 teaspoon cayenne pepper
  • 1/2 teaspoon paprika
  • 1 teaspoon brown sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

For the Cheese Sauce:

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 2 cups shredded medium cheddar cheese
  • 1/4 teaspoon salt

For Assembly:

  • 1/4 cup ranch dressing (plus extra for dipping)

Instructions

  1. Prepare the Cajun Seasoning:

    • In a small bowl, mix together the garlic powder, onion powder, chili powder, cayenne pepper, paprika, brown sugar, salt, and black pepper. Set aside.
  2. Prepare the Cheese Sauce:

    • In a saucepan over medium heat, melt the butter.
    • Whisk in the flour and cook for about 1 minute to form a roux.
    • Gradually add the milk, whisking continuously to prevent lumps.
    • Continue to cook, stirring frequently, until the mixture thickens, about 5 minutes.
    • Remove from heat and stir in the shredded cheddar cheese until melted and smooth. Season with 1/4 teaspoon salt. Keep warm.
  3. Cook the Fries:

    • Prepare the frozen fries according to the package instructions, either by baking or frying, until golden and crispy.
  4. Assemble the Voodoo Fries:

    • Place the cooked fries on a serving platter.
    • Evenly sprinkle the Cajun seasoning over the fries.
    • Drizzle the warm cheese sauce over the seasoned fries.
    • Drizzle ranch dressing over the top.
    • Serve immediately with additional ranch dressing on the side for dipping.

Notes

  • For a spicier kick, adjust the amount of cayenne pepper in the Cajun seasoning.
  • Using freshly shredded cheddar cheese will result in a smoother cheese sauce.
  • To prevent the fries from becoming soggy, serve the cheese sauce and ranch dressing on the side, allowing individuals to add as desired.
