¾ cup sour cream
¾ cup milk
6 strips bacon, preferably thick cut
3 ½ lbs. Yukon Gold potatoes
3 teaspoons salt
6 tablespoons salted butter, at room temperature
½ teaspoon black pepper
2 cups orange cheddar cheese, shredded from a block
4 green onions, sliced
Instructions
Prepare the potatoes: Peel and cut the potatoes into chunks, then place in a large pot with cold water and 2 teaspoons of salt. Bring to a boil and cook until tender.
Cook the bacon: In a skillet, cook the bacon until crispy. Remove and chop into small pieces.
Mash the potatoes: Drain the cooked potatoes and mash with butter, sour cream, milk, salt, and pepper until creamy.
Add toppings: Stir in most of the cheddar cheese, green onions, and chopped bacon. Top with remaining cheese and bacon.
Bake: Bake the loaded mashed potatoes until the cheese is melted and bubbly.
Notes
You can leave the skin on the potatoes for added texture and nutrition.
