This Lemon Parmesan Kale Salad is bright, zesty, and full of texture. Massaged kale is tossed with a tangy lemon dressing, savory parmesan cheese, and a hint of garlic. It’s a perfect side dish or a light meal that holds up well for meal prep!

Ingredients

  • 1 bunch kale (curly or lacinato), stems removed and chopped
  • 2 tbsp fresh lemon juice
  • 3 tbsp olive oil
  • 1 clove garlic, minced
  • 1/4 cup grated parmesan cheese
  • 1/4 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 1/4 cup toasted nuts (such as almonds or walnuts) or breadcrumbs

Instructions

  1. Prep the Kale: Remove the tough stems from the kale and chop the leaves into bite-sized pieces. Place them in a large bowl.
  2. Massage the Kale: Drizzle 1 tablespoon of olive oil over the kale and use your hands to massage it for 1-2 minutes until softened.
  3. Make the Dressing: In a small bowl, whisk together lemon juice, the remaining olive oil, garlic, salt, and black pepper.
  4. Assemble the Salad: Pour the dressing over the kale and toss to coat. Sprinkle with parmesan cheese, red pepper flakes (if using), and toasted nuts or breadcrumbs. Serve immediately!
