1 bunch kale (curly or lacinato), stems removed and chopped
2 tbsp fresh lemon juice
3 tbsp olive oil
1 clove garlic, minced
1/4cup grated parmesan cheese
1/4 tsp salt (or to taste)

1/4 tsp red pepper flakes (optional)
1/4cup toasted nuts (such as almonds or walnuts) or breadcrumbs
Instructions
Prep the Kale: Remove the tough stems from the kale and chop the leaves into bite-sized pieces. Place them in a large bowl.
Massage the Kale: Drizzle 1 tablespoon of olive oil over the kale and use your hands to massage it for 1-2 minutes until softened.
Make the Dressing: In a small bowl, whisk together lemon juice, the remaining olive oil, garlic, salt, and black pepper.
Assemble the Salad: Pour the dressing over the kale and toss to coat. Sprinkle with parmesan cheese, red pepper flakes (if using), and toasted nuts or breadcrumbs. Serve immediately!
