Ingredients

Units Scale

For the Crust:

  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1/4 teaspoon salt
  • 2/3 cup unsalted butter, cold and cut into small pieces

For the Filling:

  • 3 large eggs
  • 1 cup light corn syrup
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 2/3 cups chopped pecans

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang for easy removal, and lightly grease it.
  2. Prepare the Crust: In a large bowl, combine the flour, granulated sugar, and salt. Add the cold butter pieces and mix until the mixture resembles coarse crumbs. You can use a pastry cutter, two forks, or a food processor for this step.
  3. Bake the Crust: Press the crust mixture evenly into the prepared pan. Bake for 20 minutes, or until lightly golden.
  4. Prepare the Filling: While the crust is baking, whisk together the eggs, light corn syrup, granulated sugar, brown sugar, melted butter, and vanilla extract in a medium bowl until smooth. Stir in the chopped pecans.
  5. Assemble and Bake: Once the crust is done, pour the pecan filling over it, spreading it evenly. Return to the oven and bake for an additional 25-30 minutes, or until the filling is set and slightly puffed.
  6. Cool and Serve: Allow the bars to cool completely in the pan on a wire rack. Once cooled, lift them out using the parchment paper overhang, cut into squares, and serve.

Notes

  • For a richer flavor, you can use dark brown sugar instead of light brown sugar.
  • Ensure the butter is cold when preparing the crust to achieve a flaky texture.
  • These bars can be stored at room temperature in an airtight container for up to a week.
