Ingredients

Scale
  • 1 lb ground beef or Italian sausage
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 (15 oz) can tomato sauce
  • 1 (15 oz) can diced tomatoes
  • 2 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional)
  • 8 lasagna noodles, broken into bite-sized pieces
  • 1/2 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Brown the Meat: In a large pot over medium heat, cook the ground beef or sausage, breaking it apart as it browns. Add the diced onion and garlic, cooking until softened. Drain any excess grease.
  2. Build the Flavor: Stir in the tomato sauce, diced tomatoes, beef broth, Italian seasoning, and red pepper flakes. Bring to a gentle simmer and let cook for about 10 minutes.
  3. Cook the Pasta: Add the broken lasagna noodles and cook until tender, stirring occasionally to prevent sticking, about 10 minutes.
  4. Add Cheese: Stir in ricotta cheese or dollop it on top of each serving. Sprinkle with mozzarella and Parmesan cheese.
  5. Serve and Enjoy: Ladle into bowls, garnish with fresh basil, and enjoy a cozy bowl of lasagna in soup form!

Notes

  • Use any short pasta if you don’t have lasagna noodles.
  • For a creamy version, stir in a splash of heavy cream.
  • Adjust spice levels by adding more red pepper flakes if desired.
