4 links uncooked hot Italian turkey sausage (optional)
1 tablespoon extra-virgin olive oil
1 medium yellow onion, chopped
4 medium carrots, peeled and cut into ½-inch pieces (about 2 cups)
2 celery stalks, chopped (about 1 cup)
3 garlic cloves, minced
½ teaspoon kosher salt
½ teaspoon ground black pepper
½ teaspoon red pepper flakes, plus additional to taste (optional)
1 tablespoon white miso paste (optional)
1 Parmesan rind (optional)
2 15-ounce cans white beans, drained and rinsed
8 cups low-sodium chicken or vegetable broth
1 bunch curly or lacinato kale, destemmed and chopped (5–6 cups)
½ lemon, juiced
Grated Parmesan cheese for serving
Instructions
Saute Aromatics: Heat olive oil in a large pot over medium heat. Add onion, carrots, celery, garlic, salt, pepper, and red pepper flakes. Cook until vegetables are tender, about 5-7 minutes.
Add Remaining Ingredients: Stir in miso paste, Parmesan rind, white beans, and broth. Bring to a simmer.
Simmer Soup: Add kale and simmer for about 15-20 minutes until kale is wilted and flavors are melded.
Finish and Serve: Stir in lemon juice and adjust seasoning if needed. Serve hot, garnished with grated Parmesan cheese.
Notes
You can use any type of sausage or omit it for a vegetarian version.
The miso paste and Parmesan rind add depth of flavor, but they are optional ingredients.
