A hearty and nutritious soup made with kale, white beans, and turkey sausage for added flavor. This comforting dish is perfect for a cozy night in or as a warming meal during colder months.

Main Ingredients:

  • 4 links uncooked hot Italian turkey sausage (optional)
  • 1 tablespoon extra-virgin olive oil
  • 1 medium yellow onion, chopped
  • 4 medium carrots, peeled and cut into ½-inch pieces (about 2 cups)
  • 2 celery stalks, chopped (about 1 cup)
  • 3 garlic cloves, minced
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon red pepper flakes, plus additional to taste (optional)
  • 1 tablespoon white miso paste (optional)
  • 1 Parmesan rind (optional)
  • 2 15-ounce cans white beans, drained and rinsed
  • 8 cups low-sodium chicken or vegetable broth
  • 1 bunch curly or lacinato kale, destemmed and chopped (56 cups)
  • ½ lemon, juiced
  • Grated Parmesan cheese for serving

Instructions

  1. Saute Aromatics: Heat olive oil in a large pot over medium heat. Add onion, carrots, celery, garlic, salt, pepper, and red pepper flakes. Cook until vegetables are tender, about 5-7 minutes.
  2. Add Remaining Ingredients: Stir in miso paste, Parmesan rind, white beans, and broth. Bring to a simmer.
  3. Simmer Soup: Add kale and simmer for about 15-20 minutes until kale is wilted and flavors are melded.
  4. Finish and Serve: Stir in lemon juice and adjust seasoning if needed. Serve hot, garnished with grated Parmesan cheese.

Notes

  • You can use any type of sausage or omit it for a vegetarian version.
  • The miso paste and Parmesan rind add depth of flavor, but they are optional ingredients.
  • This soup can be easily customized with additional vegetables or seasonings.
