This Kale Caesar Pasta Salad combines the creamy, garlicky goodness of a classic Caesar with hearty pasta and tender kale. It’s a satisfying, make-ahead-friendly dish perfect for lunches, potlucks, or easy weeknight dinners.

Ingredients

  • 8 oz (225g) short pasta (e.g., rotini or penne)
  • 4 cups chopped kale, stems removed
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • ½ cup Caesar dressing (store-bought or homemade)
  • ¼ cup grated Parmesan cheese
  • 1 cup croutons
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook until al dente according to package instructions. Drain and rinse under cold water to cool. Set aside.
  2. Prepare the Kale: Place the chopped kale in a large bowl. Drizzle with olive oil and lemon juice. Massage the kale with your hands for 2-3 minutes until it softens and darkens in color.
  3. Combine Ingredients: Add the cooled pasta to the bowl with the kale. Pour in the Caesar dressing and toss to combine. Sprinkle in the grated Parmesan and mix well. Season with salt and pepper to taste.
  4. Add Croutons: Just before serving, top the salad with croutons to maintain their crunch.
