Ingredients

Scale
  • Main Ingredients:

    • 1 1/22 lbs. (750g-900g) bone-in skin-on chicken thighs
    • salt
    • ground black pepper
    • 2 tablespoons olive oil
  • For the Sauce:

    • 4 cloves garlic, minced
    • 1/23/4 cup chicken broth
    • 3 tablespoons brown sugar
    • 1/2 teaspoon apple cider vinegar
    • 3 dashes cayenne pepper
    • 1/4 teaspoon salt, or more to taste
    • 1 tablespoon chopped parsley

Instructions

  1. Season the chicken: Season the chicken thighs with salt and pepper.
  2. Sear the chicken: Select the sauté function on the Instant Pot and heat olive oil. Sear the chicken thighs on both sides until browned.
  3. Make the sauce: Add garlic, chicken broth, brown sugar, apple cider vinegar, cayenne pepper, and salt to the Instant Pot. Stir to combine.
  4. Pressure cook: Close the lid, set the valve to sealing, and cook on high pressure for about 10 minutes. Let the pressure release naturally for 5 minutes before quick releasing the remaining pressure.
  5. Finish and serve: Sprinkle with chopped parsley before serving.

Notes

  • You can adjust the amount of cayenne pepper to suit your spice preference.
  • For a thicker sauce, you can mix a cornstarch slurry and add it to the sauce before pressure cooking.
