These Instant Pot baby back ribs are fall-off-the-bone tender, with a perfect balance of smoky, savory, and sweet flavors, all in just under an hour. A quick and easy method for juicy ribs with an irresistible BBQ glaze.

Ingredients

  • Baby back ribs – 2 racks (about 2 to 3 pounds)
  • Olive oil – 1 tablespoon
  • Onion powder – 1 teaspoon
  • Garlic powder – 1 teaspoon
  • Smoked paprika – 1 teaspoon
  • Brown sugar – 2 tablespoons
  • BBQ sauce – 1/2 cup (or more for glazing)
  • Apple cider vinegar – 1/4 cup
  • Salt – 1 teaspoon (or to taste)
  • Pepper – 1/2 teaspoon (or to taste)

Instructions

  1. Prep the Ribs: Remove the membrane from the back of the ribs. Rub with olive oil and coat with a dry rub of onion powder, garlic powder, smoked paprika, brown sugar, salt, and pepper.
  2. Set Up the Instant Pot: Pour apple cider vinegar into the Instant Pot, place the trivet in the pot, and lay the ribs on top (cut them if needed to fit).
  3. Pressure Cook the Ribs: Seal the Instant Pot, set to high pressure, and cook for 25 minutes. Allow a natural pressure release for 10 minutes, then manually release the rest.
  4. Glaze the Ribs: Preheat your broiler. Transfer the ribs to a baking sheet, brush with BBQ sauce, and broil for 3-5 minutes until the sauce caramelizes.
  5. Serve and Enjoy: Slice between the bones and serve hot.
