  • ¾ teaspoon cinnamon (ground)
  • 1 tablespoon honey
  • 1 teaspoon lemon juice
  • ¾ cup whole wheat flour
  • ¾ cup wheat bran flour (coarse)
  • ¼ cup almond meal
  • 1 teaspoon baking soda
  • ½ teaspoon ground nutmeg
  • ⅛ teaspoon salt
  • 1 1½ cups applesauce
  • 1 tablespoon canola oil
  • 2 egg whites
  • ¼ cup brown sugar (packed)
  • 2 teaspoon vanilla extract
  • ½ cup chopped walnuts
  • ¼ cup granola

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (180°C) and line a muffin tin with liners.
  2. Mix Dry Ingredients: In a bowl, combine whole wheat flour, wheat bran flour, almond meal, baking soda, cinnamon, nutmeg, and salt.
  3. Mix Wet Ingredients: In another bowl, mix applesauce, canola oil, honey, lemon juice, egg whites, brown sugar, and vanilla extract.
  4. Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in grated apple, walnuts, and granola.
  5. Bake: Divide the batter into muffin cups and bake for 20-25 minutes, or until a toothpick inserted comes out clean.
  6. Cool and Serve: Allow the muffins to cool before serving.

Notes

  • You can customize these muffins by adding raisins, dried cranberries, or chopped pecans.
  • For a vegan version, substitute the egg whites with flax eggs.
